'Tis the season for pumpkin. Try these iced pumpkin cookies to get in the fall spirit.
2 ½ cups all purpose flour
1 teaspoon baking powder
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
½ teaspoon salt
½ cup softened butter
1 ½ cup white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
2 cups confectioner’s sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract
- Preheat oven to 350
- Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt
- In a medium bowl cream together ½ cup butter and sugar. Then add 1 teaspoon vanilla, pumpkin and egg to the mixture and beat until creamy
- Mix in dry ingredients and drop batter onto baking sheet by tablespoons, flatten slightly
- Bake for 15-20 minutes
- While the cookies are baking combine confectioner’s sugar, milk, melted butter, and 1 teaspoon vanilla to make icing
- Once cookies have cooled drizzle cookies with icing
