Chicken Parmesan Panini

Ingredients
3 boneless chicken breasts
2 ½ tsp creole seasoning
1 egg
1 cup panko bread crumbs
½ cup shredded parmesan
¼ cup olive oil
1 jar marinara sauce
4 slices provolone cheese
1 loaf of Italian bread sliced
Jarred roasted red bell peppers (optional)

  1. Pound chicken breasts into ¼ in thickness and season with creole seasoning
  2. In a bowl beat egg and season with ½ tsp creole seasoning, in another dish stir panko, parmesan and 1 tsp creole seasoning together
  3. Dip each breast into the egg and then press into panko mixture to evenly coat
  4. In a large skillet heat olive oil over medium high heat
  5. Cook chicken for 7 to 8 minutes each side, rest for a few minutes and slice into strips
  6. Heat marinara sauce in a small pan and wipe out skillet with  paper towel
  7. Build panini sandwiches by spooning marinara onto one slice of bread and top with sliced chicken, provolone, more marinara and bell peppers
  8. Drizzle both top and bottom slices of bread with olive oil and place in preheated skillet and press down on top of bread with another skillet. Repeat on other side until golden brown or use a panini press like a pro
